I’ve been using black tea generally when I make kombucha but I’m trying to cut back on caffeine and was wondering if any of you have made herbal kombucha rather than using tea. Does it work? If so, what do you use? Thanks, I’m really curious about this one.
I’ve succesfully made herbal versions of kombucha. I think regular tea lowers the pH, at least that’s my guess, so I always make sure when I make herbal kombucha to add a cup of kombucha from the previous batch. I honestly don’t know what would happen to the mother over time if I only made herbal kombucha. Would be curious if others have thoughts on this too. Jersey, have you tried this yet?
